Protein Rödbetor Brownies – aka Protein Beetroot Brownies

These brownies are made using cooked beetroot. You can’t really taste the beetroot in them which, for us at least, is a good thing! The beetroot makes these brownies richer in flavour though and even higher in nutrients! Give this recipe a go next time you’re in the kitchen craving brownies. It’s an easy recipe and really quick to make.

Ingredients:

230g beets
30g quinoa
100g peanut butter 
54g black beans (canned and unsalted)
100g egg whites
30g chocolate flavoured veggie protein powder – ideally Vegan Wondershake
39g chocolate flavoured whey protein blend – Whey Protein 360 would be perfect here
20g cocoa powder

Directions

1. Blend all ingredients in a food processor.

2. Bake in a small brownie pan for 35-40 minutes or until, when poked with a knife, your knife comes out clean.

  1. did you blend the rice first? was it raw or cooked?
    to make it better maybe a bit more cocoa? and a TBLS of applesauce and maybe a bit of extra flour? D.

  2. Yes yes! applesauce! love the idea :-)))) will try that! I used brown rice protein powder which can often come out a bit ‘dense’ so yeah maybe the applesauce will ‘soften’ it all up! I’m def tryin that THANK YOU!
