High Protein Salmon PanSandwich

Yeah, I didn’t know what to name this! A pancake? nah… an omelette? nah… Whatever its name:

Ingredients:

3 large egg whites
47g cooked spinach
6g psyllium husks
28g wheat bran
25g ricotta

Directions:

Mix together cooked like a pancake.

Stuffing ingredients:

100g smoked salmon
50g avocado
10g nutritional yeast

20g carbs (15.4g fiber)

Notes:

You can also use cottage instead of ricotta!
