Protein Works presents… High Protein Quinoa Bread with Goji Berries! This bread is delicious topped with peanut butter, almond butter, jam or even a bit of butter! You need to give it a go.
Ingredients:
87 grams of liquid egg whites
1 egg white
32 grams of Vegan Protein
10 grams of psyllium husks
64 grams of quinoa flakes
10 grams of dried goji berries
Pinch of baking powder
Directions:
1. Blend all your ingredients together until you get a thick batter.
2. Pour your batter into a small nonstick bread pan and bake at 160 C for around 40 minutes or until a fork comes out clean.
3. Leave your bread to cool and, when cool, slice it right down the middle and then horizontally so that you end up with 8 slices.
Macros per Serving (out of 4):
235kcals, 23.4g protein, 31.6g carbs (10.8g fibre)

Hi Anna, do you think this bread would work ok without the psyllium husks?
I would imagine so? You could add a bit more quinoa flakes to make up for the husks? The psyllium husks basically take a lot of the moisture out of the cake, making the batter more concise, in addition to adding the fiber but I would think you can just leave them out and this should turn out fine 🙂
Is quinoa flakes same as quinoa flour?
No. Quinoa flakes are like… oats (in that rolled oats are really oat flakes) whereas quinoa flour is, well, flour! Like oat flour 🙂
Hi, if I was to use real egg whites for all of the recipe, would it be the same amount as the liquid egg whites? :o)
