This recipe is really exciting because it’s something that I bet you had never tried or thought of before but, if you’re vegan especially or just looking for a high protein mac and cheese alternative, you’re going to fall in love. This dish contains a whooping 37g of protein and 41.5g of fibre! With only 3.7g fat. Amazing, no? Get ready to print/save/jot this one down:
Ingredients
1 cup cooked whole wheat macaroni
30g pea protein powder (our Pea Protein 80, unflavoured, is best for this recipe)
100 ml oat milk (plus some warm water, you can sub with almond milk too if you prefer)
Pinch of turmeric
12 grams nutritional yeast (very important)
Directions
1. Mix the protein powder and milk with the macaroni until you have a ‘mac and cheese’ consistency
2. Add some turmeric for the yellow colour (because appearance matters) and sprinkle the whole thing with nutritional yeast (it’s also great with Parmesan though).

Do you think this would work with soy milk and soy protein powder? That is the only protein powder I have so far.
Hi! I don’t really like to use soy because I find the arguments against its use pretty compelling so I don’t use soy milk or soy protein or… soy anything really! Why don’t you try pea protein powder? it’s fantastic 🙂

Hi Trixie, I wrote this in January of 2011 so right now I can’t tell you with 100% certainly. I would imagine a handful though as that’s what I always tend to use, around 59grams dry or so? 50 I mean.
