So for me every Sunday is ‘Refeed Sunday’. A day of epiclicious eating proportions. High carb, low protein, low fat. It’s bulk season baby. She-Hulk is in da houuuse!! And every Sunday without fail, I start my morning sitting on my deck enjoying the rainforest with my coffee and PANCAKES!!

Today I am sharing with you two of my fave pancake recipes, why? Well because I couldn’t just choose one. They are both very simple, minimal ingredients yet delicious. Please note that I am intolerant to eggs, therefore I have substituted these with pysllium husks. Triple Choc Maca Pancakes


1 / 2 scoop ON chocolate whey protein
1 cup oat flour
2 heaped tablespoons raw cacao powder
2 tablespoons dark chocolate chips or cacao nibs
1 tablespoon maca powder
2 tablespoons psyllium husks
1 teaspoon cinnamon
1 teaspoon baking powder


1. Throw all the ingredients (except chocolate chips) into a food processor and blend, adding small amounts of water until the consistency becomes like a pancake batter, then fold in the chocolate chips with a spoon.

2. Cook in small batches on a non stick pan. Serve with your choice of vanilla ice-cream or greek yoghurt drizzled with raw honey. Mmmmmm chocolate fluffy pancake heaven!

Makes 5-6 pancakes.
