Protein, Oat & Greek Yogurt Pancakes – by Courtney R.
SO excited to see this competition! I was just experimenting in the kitchen the other day and came up with this gem! Picture does NOT do justice for how delicious and moist these pancakes are!
1/2 cup protein powder of your choice
1 cup old fashioned dry oats
6 oz Greek Yogurt – flavor of your choice
1/2 cup unsweetened vanilla almond milk
1 teaspoon coconut oil
1. Add oats and protein powder into blender or food processor to make a finer dry mix. Mix all ingredients in a bowl.
2. Melt coconut oil in a pan and cook batter over med-low heat. Voila!
