I started making these pancakes as an alternative to my daily high fiber protein bar because it was giving me GI issues. I am currently in prep for a bodybuilding competition and decided to start incorporating more whole food sources vs prepackaged items as to better control what I was putting in my body. This recipe is tasty and filling and very macro friendly for a person who is currently on a competition diet.
21g coconut flour
15g fava bean flour (oat flour will work as well but will have less fiber content)
15g Cellucor Cor-fetti protein powder (or any protein powder flavor you want)
1/3 cup liquid egg whites
1/3 cup water
1/3 cup unsweetened coconut milk (or almond/soy milk)
1/2 teaspoon baking powder
Mix all and pour on a hot griddle. Because this is a gluten free recipe, smaller pancakes (4in or 10cm in diameter) hold up best and are easier to flip.
