Mixed Berry Bakewell Cheesecake by Tom K.

After an great Olympic Lifting session at the Training Shed in Daventry, our group of lifters enjoy a Protein ‘PB’ treat.

Ingredients for the base:

3 tablespoons almond butter
1/2 cup ground almonds
1/2 cup ground ‘Mixed Nuts’ (no peanuts)
1 tablespoon agave syrup

Ingredients for the Mixed berry / Cherry Jam:

1/2 cup Frozen mixed (red) berries
1/2 cup Frozen Morello cherries

Ingredients for the cheesecake:

1 pot 2% – or full fat – Total Greek yogurt (170g)
1 pot Light mascarpone (250g)
1 cup Ice-cream vanilla whey
1/2 cup liquid egg whites
1 tablespoon Almond extract

For the ‘icing’

1/2 cup Ice-cream vanilla whey
2 tablespoon Light mascarpone
3 tablespoon almond milk (to get consistency)
Handful of sliced almonds
