Crazy About Coconut Bars – Lauren

I must admit…I do not like coconut…until I took a bite of these bars. So what compelled me to create these amazing bars? Well when I first saw your Invention Box Challenge I knew I wanted to make something I feel is not really present within the healthier protein dessert realm, and something I love to eat every Christmas: 7 layer/ magic bars. However, after seeing the ingredient list I felt I would have to make a less traditional 7 layer bar, and since my mom has a dear love of coconut, the Crazy About Coconut Bars were born! There are 4 layers to this coconut filled bar, a bottom crust, shredded coconut and Quest Bar crumbles, a coconut “caramel” layer, then more toasted coconut and Quest Bar crumbles. Feel free to omit or add more coconut or Quest Bar crumbles!

Recipe: Begin Preparing the coconut “caramel” and then start from layer one and work your way up!

Pre-heat the oven to 350 degrees Fahrenheit, and spray non-stick baking spray on a 4×4 ceramic baking dish.

Layer 3: Coconut “Caramel” 

2 Cups Unsweetened Vanilla Coconut Milk
1/3 Cup Coconut Sugar

Bring the milk to a boil in a pan ( nonstick!) then add the sugar and reduce the heat to a simmer. Keep an eye on the caramel, stirring occasionally. It will be done when the amount of milk had reduced about halfway down, darkened in color, and has thickened.

Layer 1: Crust

1/3 Cup Oatmeal
1/2 Scoop Vanilla Whey Protein Powder ( I used Cellucor Whipped Vanilla)
1 Egg White
1/3 Cup Almonds
1/4 TSP Baking Powder
1 TBSP Coconut Milk

Grind up almonds and oatmeal to a flour- like consistency then place in mixing bowl. Add protein powder, baking powder, egg and milk and mix well. Transfer the dough to the baking dish and spread to cover the bottom. Beware, it will be very, very sticky! Then pop the dish in the oven for about 7-10 minutes. ( mine was ready at about 8). Once that is finished and out of the oven you will add the rest of the layers.

Layers 2 & 3

1/4 White Chocolate Raspberry Quest Bar
1/2 Cup Unsweetened Coconut Flakes ( I used Bob’s Red Mill)

Chop up the Quest Bar into lots of small pieces and sprinkle  ,along with the coconut flakes, on top of the crust. Then drizzle your coconut “caramel” all over the second layer. Once that is done, you will place the dish back in the oven to bake approximately 10 minutes. You will know when it is done because the coconut and quest bar will be a perfectly toasted golden brown.

Layer 4

1/4 Cup Toasted, Unsweetened Coconut Flakes
1/4 White Chocolate Raspberry Quest Bar

Toast 1/4 cup of unsweetened coconut flakes in a pan on medium- low heat, until a nice golden brown. Then chop the Quest Bar into more small pieces, like before. Sprinkle both on top, and voila! your Crazy About Coconut Bars are complete and ready to eat! Allow them to cool, cut it into 9 pieces, and try not to devour them all in one sitting!
