Chocolate Protein Cupcakes with a Peanut Butter Center – by Rosanna

Combine:

1/2 cup chocolate protein powder
1/2 cup flour (I used brown rice flour but you can subsitute this for oat flour and almond flour)
1/4 cup cocoa powder
1 tsp baking powder
170g Greek yoghurt
1 egg
1 egg white
1/4 cup almond milk
1/3 cup powdered stevia

Directions

Divide the mixture between 9 cupcake cases. Then pop a teaspoon of peanut butter in each case and push it down so it is submerged. Then just bake them in a 180 degree oven for around 10-15 minutes until they’re cooked through! They’re best eaten fresh from the oven or you can microwave them to remelt the peanut butter!
