“Buffed-Up” Protein Biscotti with Roasted Strawberries – Rebecca

Ingredients

144g (2 cup) strawberries, sliced
120g rolled oats
60g vanilla whey
64g (2 servings) crunchy peanut butter
21g (1 serving) honey
40g water
1 tsp baking powder

Directions 

1. Preheat oven to 350 degrees F

2. Put strawberries on a parchment-lined baking sheet and roast for 30-40min

3. While the strawberries are roasting, pulverize 90g of the oats into flour and combine with the remaining whole oats, 60g (~2 scoops) of the vanilla whey, peanut butter, honey, and baking powder

4. After letting the strawberries cool, fold them to the biscotti mixture BEFORE adding in any water (the mixture gets somewhat sticky after water is added, so it is difficult to fold in strawberries at that point)

5. Add water until all of the dry ingredients are just combined

6. Separate mixture into two portions on a baking sheet and shape however you’d like, being sure to leave the dough about 1/2-3/4 inch thick

7. Bake (at 350F) for 20-25min

8. Cool for 10min, then with a serrated knife, cut the portions of dough into 8 total strips

9. Turn the strips on their sides and bake for another 5-8min on each side to give them that nice crunch!

10. Attempt to let the biscotti cool if you can resist, and mix the remaining vanilla whey with small amounts of water until you get a thick glaze-like consistency

11. Drizzle over the biscotti
