Spicy Chicken Protein Pizza (Gluten-Free)

Protein Pizza – it’s one of the easiest things you can make with your protein powder. It’s also one of the tastiest! And it’s great because it satisfies any and all pizza cravings, allowing you to stick to your healthy-eating diet without feeling at all deprived. What’s not to love about that, right? There are a bunch of protein pizza recipes under the ‘Protein Pizza’ category here at Pow but do check out the Protein Pizza pack in the Protein Pow App too because that’s where some of my best ones live!

So, to make protein pizza, you have to start out by making your protein crust:

1/8 cup pea protein powder (see Note 1 for subs)
1/2 cup liquid egg whites
2 tbsp coconut flour
Screen Shot 2014-11-11 at 18.48.261/8 cup gluten-free oats (or buckwheat flakes)
1-2 tsps water

1/2 Muscle Food chicken breast, cooked
2 tbsp tomato paste
Screen Shot 2014-11-11 at 18.48.521 sliced tomato
1 tsp red chile powder
2 tsps green chile powder
1 tsp ground pepper
1/8 cup cheddar cheese

1. Blend all your crust ingredients together until you get a sort of ‘dough’ that Spicy Chicken Protein Pizza (Gluten-Free)you can shape with your hands.

2. Flatten this dough and fry it up on a nonstick pan. Pretend you’re making a thick savory pancake here so (carefully) flip it when it has browned on Spicy Chicken Protein Pizza (Gluten-Free)one side.

3. Add your toppings, beginning always with tomato paste and ending with the cheese. I topped my pizza with chicken, tomatoes, dried parsley, red chile, green chile, and pepper.

4. Finally, stick it under your grill or broiler at medium or high heat. What you’re doing here is melting your cheese and ‘fusing’ all the flavors together so keep an eye on the pizza and take it out when everything looks done (it takes about 8 minutes or so) and BAM! It’s ready.

Macros for the crust (without the toppings as these are up to you):  252kcals, 28g protein, 17g carbs (out of which 6g is fiber!) and 5g fat.

Note: I used this pea protein powder from MyProtein to make this. It’s the one I always use (if you’re in the UK and you want to get it too, remember to use our exclusive discount code for 10% off – it’s POWMP). If you’re in the US, you can get the same stuff here and, if you’re in Australia, you can get this one – from Bulk Powders Australia (use code BPPOW to get 10% as well!) What about substituting the pea protein powder, can you do that? Sure, you can use rice protein powder or hemp. I don’t recommend using whey though, not in this recipe. If you want to use whey, just consult another one of my recipes though. Check them out here.
