Choc Chip Cookie Dough Protein Brownies – a Guest Post by Karmen

Today I bring you guys a really awesome guest recipe. It’s by Karmen, from Australia. I found Karmen on Instagram and right away gave her a ‘follow’ because her food is gorgeous! Ingredients
 (for the Cookie Dough Layer):

1 can (approx. 400g) chickpeas (rinsed and drained)
1 scoop vanilla whey protein powder
1/3 cup natural peanut butter or almond butter
2 eggs
1/3 cup sugar free maple syrup (or agave nectar or honey)
2 tablespoons vanilla extract
2 teaspoons natural sweetener
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 double chocolate chunk quest bar, roughly chopped

Ingredients (for the Brownie Layer):

1 can (400g/15 oz)
black beans (rinsed and drained)
1 scoop chocolate whey protein powder
2 eggs
1/3 cup unsweetened apple sauce
1/3 cup coconut oil
3-4 tablespoons raw cacao powder (or cocoa powder)
2 teaspoons instant coffee (dry mix)
2 teaspoons vanilla extract
1/3 cup natural sweetener
1/2 teaspoon salt
1/4 teaspoon baking powder

Directions:

1. Preheat oven to 175C, line an 8×8 inch baking tin with baking paper. Mix all the brownie ingredients in food processor until batter is smooth and spread batter evenly over the baking tin.

2. Mix all the blondie ingredients in food processor, except the quest bar, process until batter is smooth, and then fold in the quest bar.

3. Now spread blondie batter evenly over the brownie batter. Bake for 25-30 minutes or until a toothpick comes out clean. Remove from the tray and cool on a wire rack. Makes 16.
