Ancient Cocoa Protein Bars (Paleo)

I’ve made these bars two days in a row now and I’m making them again tomorrow morning. Looking back I reckon I should have just made a bunch of bars on Thursday to take with me to class yesterday, today, and tomorrow but hindsight is 20/20, right? Either way, it doesn’t really matter. Making these bars takes under five minutes. And they’re really reaaaally yummy, I think so at least. If you like dark chocolate especially, I suggest you give these ones a go! You can shape them into truffles too and they’re awesome because you can wrap them in foil, stick them in your bag, and take with you on the road.

I made them using PaleoPro protein powder, in case you’re wondering where their ‘Paleoness’ comes from. The ‘ancientness’ of the cocoa comes from the PaleoPro too – it’s just how they call their chocolate flavored protein powder in order to conjure up primordial times and all that yadiyadiya. I’ve included an exclusive 5-10%  discount code if you want to try PaleoPro too by the way. It’s a pretty awesome powder and you can get it at TrueNutrition.Com! Just read the note at the end of this post because, right now, what you’re getting is the recipe:

1/4 cup goji berries
1.5 tablespoon sunflower seed butter (you can sub this with PB too by the way)
1/8 cup 100% cocoa powder
1/4 cup chocolate PaleoPro
2 tablespoons coconut flour
1/4 cup cartoned coconut milk (or almond milk to keep with the ‘paleo’ theme)
1/2 tablepoon toffee flavdrops (or your sweetener of choice)

Directions:

1. Using a food processor or handheld blender, blend all the ingredients together until you get a sort of ‘paste’.

2. Shape this ‘paste’ into either bars or truffles, using some extra cocoa powder if your mix is too sticky (not much though, just a teaspoon on your hands would do the job!) You can roll them in cocoa powder too at the end if you want. I did it just for aesthetics :-) You can also coat them in melted dark chocolate – for that extra chocolatey punch of xocolatl kaPOW!

3. Stick them in the fridge until you’re ready to eat them or wrap them in aluminium foil and take them with you to enjoy while you go about your day!

Macros per bar (out of 4 small ones):

139kcals
11g protein
10g carbs (out of which 5g is fiber!)
6g fat

You don’t need to cook the bars or do anything to the mix instead. All you do is mix your ingredients together, shape the ‘dough’ into bars, and you’re done.

to make and I quite enjoy making them; gives me a chance to do some cooking before I jet off into the wild.

Discount code for Paleo Pro is PPR100 and entitles you to 5-15% off of WHATEVER you get from the True Nutrition site! So do your buds a favor and get your hands on some Peanut Butter & Jelly flavoring powder
