30 Second Oatleass Oatmeal (Gluten-Free & Dare I say Paleo?)
A few months back, I posted a photo on facebook for a dish that I thought no one would like. I posted it because it’s a dish I love profoundly – a dish I like to call ‘My Breakfast Bowl of Protein Pow.’ The reason I thought no one would like it is because my friends and family think it’s one of the weirdest foods ever. Whenever I’m having breakfast with company in fact, and they’re all sitting around the table eating their cereal and stuff, in I walk with my bowl of WTF and people stare. Oh do they stare. “Anna… what IS!? that???” they’ll ask. Or I’ll get a sarcastic ‘mmmmm!’ or just a silent stare full of ‘who-ARE-you?’ But I love it, I love it anyways. And I posted it on facebook a few months ago because I wanted to see what you guys thought! Would you like it or would you, like most of my family and friends, find it profoundly weird?
Within seconds of posting the photo though, a barrage of ‘likes’ descended upon it and people started asking for the recipe! I was pretty shocked to be honest. I happily shared the recipe with everyone here and you know what’s funny? That my Breakfast Bowl of Protein Pow has gone on to become one of the top twenty most visited posts on proteinpow.com (which is a lot to say give that there are over 900 recipe posts here!)
Now, you might be wondering, what does my Breakfast Bowl of Protein Pow have to do with THIS recipe – for oatleass oatmeal? Well, it has a lot to do with it because it’s just as strange and I’m just as unsure as I was with the Bowl of Pow as to whether you will like this. It’s just… a bit… usual is all. But I love it. Let me tell you about it:
I came up with this Oatless Oatmeal idea a few days ago in an attempt to make something quick to eat alongside my WheyHey Protein Ice Cream. I was watching a (pretty bad, in retrospect) movie and I wanted something creamy but I didn’t want to make a protein pudding because protein pudding + protein ice cream = a bit of a protein overload which isn’t what I was after at the time. I wanted something to have with the ice cream. Something puddinglike yet creamy and low in carbs yet fibrous and hmm….
So I made up this recipe and it’s awesome! It’s PACKED with fiber. But it has a downside – it goes kaput if you heat it up (it just gets really viscous and gummy). In that way, I guess it’s not THAT much like oatmeal since oatmeal is de facto warm but… it’s still oatmealy for some reason and creamy and does the exact same job as oatmeal. Anyways, try it out and tell me what you think. I’m curious as to whether you like it as much as I do :-)
You can make it with chocolate or without. If you make it with chocolate, you need to use cocoa powder and more milk. If you make it without chocolate, just ditch the cocoa and use a bit less milk. You can add plenty of nuts and seeds to it too! As well as flaked coconut and cinnamon. Flaked coconut is lovely in fact :-) Anyways, here’s the recipe. There’s not much to it. All you need to do is mix the ingredients together and munch. Please read the notes below though as they’re pretty important. OK. Here it is:
1/8 cup whole psyllium husks
2 tablespoon coconut flour
1 cup cartoned coconut or almond milk
2 teaspoons sweetener of choice
Macros per bowl:
21carbs (19g of fiber so net carbs = 2g!)
With the protein ice cream (WHEYHEY!) on top =
26g carbs (19g fiber!)
