The Place Beyond the Pine… Nut Chocolate Chip Protein Cookies

Tonight I went out with a friend to watch The Place Beyond the Pines. It was a pretty tiresome and drawn out movie, so much so that my friend fell asleep halfway through it. Meanwhile there I sat wide awake, thinking about pine nuts: “I wonder if pine nuts are good in baking…”, “they are quite nutty and almost buttery in flavor…”, “I bet they’re interesting in cookies…”, “maybe vanilla?” “or maybe chocolate chip protein cookies…”, “definitely chopped or blended in though”, etc. When the movie finally ended, I shook my friend awake, we walked out of the cinema, said goodbye, I made my way home, almost got knocked down by the furious tail-wagging of this gorgeous fella, went into the kitchen, and baked a batch of these pine nut protein cookies. Because something good had to come from watching that incredibly boring movie!


1/2 cup vanilla whey protein
2 tablespoons coconut flour
1/2 cup almond milk
1/4 cup vanilla pea protein pow
1/8 cup pine nuts
2 whole eggs
2 squares 85% dark chocolate (roughly chopped and added on top)


1. What I did was just blend all the ingredients together, spoon them onto a silicone muffin baking tray before topping each ‘blob’ with a bit of the chocolate, and baking them in the oven at 180 C (356 F) for no more than 15-20 minutes.

2. I then took them out, let them cool, ate a couple, and shared the rest.

The verdict was as follows: “chewy”, “tasty”, “nice!”, “needs more sweetness?”, “I like the pine nuttiness”, “yum!”, “I would have added some fresh fruit inside, maybe berries?” and “I’m eating another one!”
