Coconut & Lime White Chocolate Covered Protein Truffles

1/3 cup low fat cottage cheese
1.5 tablespoon vanilla casein (could sub for whey but you’d have to add more coconut flour)
1 tablespoon granulated erythritol or other sweetener
1 teaspoon coconut flour
1/4 teaspoon vanilla extract
1/2 teaspoon lime zest (or more if you’re really into lime)
1 tablespoon shredded coconut
8 squares sugarfree white chocolate
1. Mix cottage cheese, casein, sweetener, coconut flour and vanilla extract with a handmixer until you get a smooth batter. Add lime zest and coconut and stir it into the batter. It should be moldable so if the batter is too sticky add a little more casein or coconut flour. To dry? Add some milk or water.
2. Melt the chocolate in a bowl in the microwave for 30 sec. Keep going in 10 sec intervals until it is completely melted.
3. Dunk the truffles in the chocolate and put on a plate. When the’re all covered in chocolate, put the truffles in the fridge or in the freezer until the chocolate has hardened.

2 g carbs (mostly from sugar alcohols from the sugarfree chocolate)
