Protein Gingerbread Strongman Cake

I wanted to make gingerbread strongmen cookies because there’s none to be found in this world and I’ve always thought gingermen needed biceps. So, I made some gingerbread strongman cookie cutters which ended up turning massive – more cake sized… let’s say cookies fit for a giant? Anyways out of these homemade cookie cutters, the first gingerbread strongman I made turned out huge. It also turned out like a cake and very funny looking because the right arm got severely deformed and the left leg threatened to break free (the pic below). That aside, I think the end product was fine, well, at least it was fine tasting and it gave me the chance to test my cookie cutter idea (which obviously needs work). What I did was just turn the giant cake into a cake sandwich by using a pumpkin + vanilla casein filling and topping. It was an awesome combo at the end because the gingerness from the cookies was subtle and the whole ensemble very vanillaful with the pumpkin POW and The Nom Nom Nom :-D

Ingredients:

1 egg white
2 eggs
1/4 cup unflavored promax whey
1/4 cup golden syrup oats
1/8 cup coconut flour
1/8 cup pea protein
1/2 cup quinoa flakes
1/2 tablespoon baking soda
1 tablespoon ground ginger

Directions:

Blended together and baked INSIDE my homemade cookie cutter for 20 minutes at 170 C (320 F).

Macros per 1/4 of the man:

166kcals
17g protein
16g carbos (8.3g sugars/4.1g fiber)
3.3g fat (1.3g sat)

As you can tell, the fact that I ‘stuck’ the batter inside the cookiecutter is an indication that the mixture wasn’t doughy enough, not doughy in a cookie sense so, yeah, I need to work on that ;-) When it came out, I just sliced the man horizontally and filled him with 30g vanilla casein mixed in with 100g pumpkin and a bit of water. That was it and, at the end, I quite enjoyed it – it was a humorous piece of yummy gingery cake :-)
