A Grilled Cheese Sandwich on Pumpkin Protein Bread

Someone once told me that after one’s workout, one’s palate is more sensitive to taste; that we enjoy food more. I thought it sounded a bit hm-hm at first but, then again… maybe? What do you think? I, for one, sure take massive pleasure in my postworkout meals so maybe the superlatives are all tied to adrenaline? Hmm… naaah (I love good food 24/7 hehe). Gym-joy must certainly have contributed some though. See, after having deadlifted 85kg (warahoohooo), I was in a state of elation all the way from the weight floor to my house so that, by the time I bit into this beast of a sandwich, I found myself in a state of pure rapture :-) The pictures don’t scream best-sandwich-EVER but I sure almost did :-P Recipe? 


1/2 cup pea protein 
1/4 cup hulled hemp seeds 1 cup egg whites
1/2 cup canned pumpkin pure
1/8 cup ground almonds
1/8 cup coconut flour
1/2 cup coconut milk
1 teaspoon baking powder
2 tablespoon caraway seeds
1 teaspoon sea salt
10g cheddar cheese


1. Throw ingredients into a bowl and blend them together.

2. Bake this for 20 minutes at 150 celsius.

3. Let it cool and slice.

4. Put 10g of cheddar cheese between slices and grill in a nonstick pan with coconut oil.

Macros per Serving (out of 2):

40g protein
23g carbs (22g fiber)
18g fat

England may not be the first place that comes to mind when asked ‘which country would you say has the best cuisine?’ but its sharp cheeses sure are fantastic. C’est tout. The bread was a bit fragile as you can see in the pics but oh! it was so soft, the caraway seeds complimented the pumpkin so nicely, and the sharpness of the cheddar tied it all together beaaaautifully. All smiles over here, all smiles :-D :-D :-D
