Veggie Protein Pattie-Pancakes

Something about eggs for breakfast… something about strange egg concoctions for breakfast… Decided to break the fast creatively today, with protein pattie-pancakes (pattie pancakes because they kind of straddle the divide between the two).

Ingredients:

4 egg whites
1 heaping tablespoon pea protein
1/2 tablespoon superveg
1/2 coconut flour (blended)
1/2 grated zucchini

Directions:

Fry them on a hot hot hot nonstick + coconut oiled pan and kaboom!

These cute little fat patties ensued which I proceeded to stack up and on top? an egg hat. Strange looking but mmm!! :-)))))
