The Great Protein Cookie Search – Cookie 3

I… didn’t post protein Cookie 2 because it was somewhat of a structural disaster. Here is protein cookie 3 though (I’m on a mission to get to the Perfect Protein Cookie). It somewhat roughly and imperfectly sort of worked. Well… kind of. I feel like I’m getting closer to the holy grail of protein cookies, even though I’m not quite there…. yet. See, I kind of messed up with these ones by haphazardly baking them in random thick semi-round-and-almost-rectangular-shapes so they turned out a bit like cakes BUT the taste and mm factor was there, just got to work on the texture and crunch factor by, amongst other things, baking them thinner and tweaking the ‘wet/crunching’ ingredients. Definitely one step closer though so :-) If anyone wants to try these ones

Ingredients:

1/8 cup powdered egg whites
1/8 cup liquid egg whites
1 egg
1 small banana
1 tablespoon hulled hemp seeds
2 tablespoon quinoa flakes
2 tablespoon goji berries
1/4 cup hemp protein powder
1 tablespoon cocoa
1 tablespoon cocoa nibs

Directions:

Mix everything together and bake.

Notes:

I decided to have some of the cookies before I hit the gym, alongside my espresso. While the espresso was being made, the ground espresso caught my eye and I decided to dip a cookie into it ‘just to see’ if I should add some espresso to my next round of cookies. Result? HOLY MONGOOSE! Fantastic!!!! First of all, the cookies naturally (because of the cocoa nibs) have this great crunch going on. Well, with the espresso on top of it? A! The whole cookie just climbs to an entirely higher level! I proceeded to dip and sprinkle the whole cooking into/with ground espresso and just had a shot of milk on the side. It turned into a kind of deconstructed (protein) mocha –> incredible!!!!!!!!!!!!! :-))))))))))
