‘Butter’ Protein Cinnamon Pudding

So yes, like I wrote below, I dished the rest of the mixture in a ramekin (well maybe 3/4 since I ate a bunch out of the bowl he he). Topped it with walnuts and in the oven it went on a lower heat. Result? A yummy pudding that makes me wish I had busted out some carrot cake ice-cream on top (next time). Wooooopaaa to new combinations!
