A Goji Protein Bread Dark Chocolate Sandwich

The other day I made a protein bread and have, for the past few days, been eating it in lots of different ways. First, I had a couple of slices with just almond butter and a banana (mmmm). Then, I enjoyed a few slices with my sunny side up eggs (to dip into the yolk and so on). Finally, I made some dark chocolate protein sandwiches by lightly frying a couple of slices on coconut oil and sandwiching my 2 squares of 90% dark chocolate in between. Oy! Absolutely delicious! I recommend you try it. You can try it with ANY protein bread you like – there’s a bunch of protein bread recipes here and a bunch more in the Protein Pow App! This particular bread loaf, I made as follows (and forgive me but the recipe is in grams; I didn’t think to use cups when I made it):

Ingredients:

18g vanilla (or plain) pea protein powder
162ml liquid egg whites
15g apple fiber (you can use ground flaxseed instead if you don’t want to use apple fiber)
15g goji berries
40ml milk
7g brown rice protein powder

Directions:

Bake in a mini loaf pan at 170 degrees for about 20 minutes or until your knife comes out clean. When it came out, I just sliced it horizontally it yielded four slices.
