Triprotein Dark Chocolate Muffins

Triple big phat YES. These turned out A-M-A-Z-I-N-G. Truth is, I’m over the moon happy because this was a complete and utter experiment of randomness! Aho haaa! :-D

Now the ONLY issue some of you may have is that they are not very sweet. I did this on purpose because I wanted a muffin that I could eat alongside a piece of real chocolate.

I wanted a muffin I could cut in half and fill with banana+nut butter. And moses. This. Is. IT. Forgive my hyperbolical chat.

321g aduki beans (i.e. a can)
35g vanilla whey
28g hemp protein
18g brown rice protein
153g egg whites
1 egg
28g cocoa
baking powder and soda

1. Mix the above ingredients in a bowl.

2. Bake at around 150 degrees for about 20 minutes and BOOOOOOOOOOOM! Nine beauties materialize right before your eyes.

Macros per Serving (out of 9):

9.8g carb (3g fiber)
12.2g protein
2.2g fat (out of which 0.3 = sat)

With a piece of dark chocolate in there? Hey. ZeusI mean, guys. All the carb in these babies comes from the beans! and beauty is you obviously can’t taste them. Here is where you MAY want to add some honey or sweetener so they turn out proper chocolatey instead of dark like I like them. Up to you.. They turn out sooo moist and light and oh la la la! :-D

one kind of PP? I imagine so but the texture would be markedly different I pressume, especially with whey as i find it tends to dry muffins and give them a rubbery texture i am not a fan of. you CAN use black beans, i often do, i like adukis because they are higher in protein and somewhat ‘milkier’ tasting if that makes sense but black beans work as well. The calories ARE right oh shit they’re not! hahaha i forgot a dot, its 109.6 kcals hahaha i’m on to fixing that now :-D baking soda and powder, about 1tsp of each :-)

So I made these tonight, came out pretty good taste wise (coulda been sweeter, will add more sweetener next time)…

However one big problem, they didnt rise…How much baking powder and soda did you use? I used 2tsp baking powder, no soda, and tossed it right in the oven after blending all ingredients and it came out brownie like, not cake like like how I wanted it.

Also, it wasn’t very moist, you think adding a 1/2 cup applesauce might do the trick? I might do that next time….

I can’t wait to try these! A great way to use up all the adzuki beans that I have in my freezer.
