Coffee Pecan Protein Pancakes with Vanilla Toffee Pea Protein Syrup – by Alexander H.

Hello everyone, my name is Alexander, it is my pleasure to participate in the competition. I cannot wait to see all the awesome pancakes you guys come up with.  I can be a fan of coffee and I decided to make coffee pancakes, I don’t think I’ve seen many. I gave them a really nice soft texture with a bit of sweet moist from applesauce, just one tablespoon did the trick. Pecans added nice dark color and healthy fats. Besides oat flour I also used one of my favorite flours – millet flour, which is naturally gluten free and has unique taste, and of course who doesn’t love pea protein.

Pancake Recipe:

Dry:

1/3 cup Oat Flour
3 tablespoons Millet Flour
1/4 cup Pecan Meal
1 tablespoon Ground Coffee
2 tablespoon non-flavored Pea Protein
2 tablespoon Banana flavored Whey
1/2 teaspoon Baking Powder

Wet Ingredients:

1/4 cup unsweetened Almond Milk
2 tablespoons Egg Whites
1 tablespoon Applesauce

Syrup Recipe:

1/4 cup unsweetened Almond Milk
2 tablespoons Vanilla Toffee flavored Pea Protein

101 kcal
4g Fat
10g Carbs (1.8g Fiber/1.2g Sugar)
7g protein

Syrup Macros per Serving (out of 6):

11 kcal
0.1g Fat
0.4g Carbs
2g Protein

Notes:

The syrup was really easy, just almond milk mixed with flavored pea protein (vanilla toffee flavor is amazing), and it came out actually really tasty and absolutely healthy!
