Here’s a healthy breakfast twist on a classic dessert!

Pancake Ingredients:

1/2 cup oats (blended into a flour)
1 teaspoon baking powder
1 scoop vanilla protein powder (I used About Time)
1/4 cup nonfat plain greek yogurt
1 egg white
1 tablespoon un-sweeetened almond milk
stevia to taste

Directions:

Mix the dry ingredients first and then add the wet. Batter should be thick, cook over medium heat.

Boston “Cream”:

1 package instant vanilla pudding (fat free/ sugar free)
1/3 cup nonfat plain greek yogurt

Directions:

Take 1/4 of the instant vanilla pudding packet (8g) and whisk it together with the greek yogurt, set aside.

Chocolate Sauce:

2 squares 100% dark chocolate
Stevia to taste
2 tablespoons un-sweetened almond milk

Directions:

Melt the chocolate over a double boiler and add the almond milk and stevia to taste.

 Assembly Directions:

Layer the “cream” in between each pancake and top with chocolate sauce! Simple, easy, and delicious! Tastes like the real thing but way healthier, plus you can eat it for breakfast! :)
